The New York Strip is a well-marbled steak with a fat cap. It's known for its texture, flavor, and fat content. The strip is a fat cap that should be rendered into the steak while cooking and, if preferred, cut off before serving. This NY strip goes through our wet and dry-aging process and comes from some of the highest quality cattle. Even our choice steaks exceed the parameters of premium quality in taste and texture.
