🔥 You’ll Need:

  • 1 TriTails Chuck Roast (3–4 lbs)

  • 2 tbsp olive oil

  • 1 large onion, sliced

  • 4 cloves garlic, smashed

  • 4 carrots, cut into chunks

  • 3–4 baby potatoes, halved

  • 2 cups beef broth 

  • 1 tbsp tomato paste

  • 2 tsp kosher salt

  • 1 tsp black pepper

  • 1 tsp dried thyme

  • 1 tsp rosemary


🍽️ Instructions:

  1. Preheat oven to 300°F.

  2. Season roast generously with salt & pepper.

  3. Sear roast in a Dutch oven with olive oil—about 3 min per side until browned.

  4. Add onion, garlic, and tomato paste. Stir for 1–2 minutes.

  5. Pour in beef broth and nestle in carrots & potatoes.

  6. Sprinkle thyme & rosemary on top.

  7. Cover and roast in the oven for 3.5–4 hours, until fork-tender.

  8. Rest for 10–15 minutes before slicing or shredding.
