Prime Rib

The delicious prime rib! An excellent choice for large dinner parties, weddings, or catering. Prime rib is the ribeye loin, and TriTails Prime Rib comes in approximately 16-18 lbs. This loin will easily feed 15-25 people.  

This recipe can be done with or without a smoker.  

Needed ingredients:

Coarse Ground Salt
Pepper
Cilantro
Basil
Oregano
Lemon Pepper 
Garlic 
Other optional spices: Rosemary & Thyme
Foil
Large roasting pan
If smoking: Mesquite wood OR liquid smoke.  

 

Smoking Instructions: 

  1.  Thaw TriTails Prime Rib starting the day before.  
  2. Once taken out of the package, throw immediately on the smoker with Mesquite wood and cook for 45 minutes.  
  3. Preheat the oven at 350ºF
  4. Take your Prime Rib out of the smoker and place it in a roasting pan. Sprinkle twice as much salt you would use if it was ready to eat, pepper, cilantro, basil, oregano, lemon pepper, and a dash of granulated garlic.  
  5. Add 3/4ths to 1 inch of liquid; this can be water, beer, or wine. This liquid helps keep the meat tender.  
  6. Cover in foil and place in the oven for 3 to 3.5 hours or until internal temperature has reached 135ºF for medium-rare or 140ºF for medium.  
  7. Once it has reached the desired temperature, take out of the oven, allow the meat to rest for 10-15 minutes, and then slice & serve!

No Smoker? No problem!  

Instructions:

  1.  Thaw TriTails Prime Rib starting the day before.

  3. Once taken out of the package, place the loin into a roasting pan. Lather the loin with liquid smoke, BBQ sauce, or your desired sauce. 
  4.  Sprinkle twice as much salt you would use if it was ready to eat, pepper, cilantro, basil, oregano, lemon pepper, and a dash of granulated garlic. 
  5. Add 3/4ths to 1 inch of liquid; this can be water, beer, or wine. This liquid helps keep the meat tender.
