Faith's Beirocks

(Ranch-Style Stuffed Rolls)

Warm, cheesy, and packed with savory meat and cabbage—these pillowy pockets are a ranch favorite for a reason.


Ingredients

Filling

  • 2 lbs TriTails Ground Beef (we like it meaty!)
  • ½ head green cabbage, finely chopped
  • 1 medium onion, finely chopped
  • 3 tbsp butter (cubed)
  • 4 garlic cloves, minced
  • 1 tbsp ground cumin
  • 1½ tbsp smoked paprika
  • ½ tbsp cayenne pepper (adjust to taste)
  • Salt, to taste
  • 8 oz fresh grated Parmesan cheese
  • 8 oz fresh grated Gruyère cheese

Dough

  • 2 cans Hawaiian roll biscuits (or any fluffy biscuit dough)
  • All-purpose flour (for dusting)
  • Butter, melted (for brushing)

Instructions

1. Sweat the Cabbage & Onion

In a large pot over low heat, combine cabbage, onion, butter, and a generous pinch of salt.
Cover and cook low and slow for about 1 hour, stirring occasionally, until soft and fragrant. (You can cook longer if desired, it will only bring out more flavor.  You can also do less but realize, it will have less flavor.) 

2. Cook the Beef Filling

While cabbage is finishing, brown the ground beef and garlic in a skillet over medium-high heat.
Once browned, reduce heat and stir in cumin, paprika, cayenne, and salt to taste.

3. Add Cheese & Cabbage

Grate the Parmesan and Gruyère. Add both cheeses to the warm beef mixture and stir until melted.
Then fold in the cooked cabbage and onion mixture. Set aside.

4. Prepare the Dough

Preheat oven to 350°F.
Lightly flour your counter. Flatten each biscuit round with a rolling pin to about 4–5 inches wide.

5. Assemble the Bierocks

Spoon a heaping portion of filling into the center of each dough round.
Wet your fingers and pinch the dough closed tightly like a dumpling.
Place seam-side down on a greased or parchment-lined baking sheet, about 2 inches apart.

6. Bake

Brush tops with melted butter and pierce each one with a fork to vent.
Let rest for 5 minutes (this helps keep them fluffy), then bake for 15–20 minutes, or until golden brown.

7. Finish & Serve

Remove from oven and brush with more butter. Let cool slightly—and enjoy while warm!


📝 Ranch Tip

These freeze great! Just wrap in foil and reheat in the oven at 300ºF for 10–15 minutes.


 

These bierocks take a little prep, but once you taste that buttery crust with the melty cheese and smoky beef filling, you’ll know it was worth every minute.
