T-Bone Special
Perfect with a beer, the Porterhouse and T-Bone come from the Short Loin portion of the cow and are almost identical cuts. Both are bone-in N.Y. strips that include a portion of the Tenderloin on the other side of the bone. The main difference is that the Porterhouse has a larger filet portion, featuring a full 8 oz of filet, while the T-Bone has between 0.5 to 4 oz.
These cuts also benefit from being bone-in, which helps retain juices and keeps the beef incredibly tender. Just like ribs, the proximity to the bone keeps the meat juicy and flavorful.
