Picanha is that elusive cut that many people don't hear about. If you're a fan of sirloin, this is a dream come true, and if you're not into sirloin, this will change your mind! A cut that originates in Brazil, the picanha is from the sirloin portion of the cow. This sirloin, however, comes from the cap, making it more tender and featuring a small fat strip. Think of it as a N.Y. Strip in the way it cooks. The fat renders into the steak, creating some of the tastiest bites of steak you have ever had. We cannot recommend trying this steak enough.
