Stuffed Avocado

Love avocados? Love beef? Then buckle up—this dish is for you.

This recipe is what happens when taco night and comfort food fall in love with a ripe avocado. Creamy, cheesy, and packed with seasoned TriTails beef, it’s a low-carb crowd-pleaser that even ranch hands go back for seconds on.


What You’ll Need

Beef Filling

  • 1 lb TriTails Premium Ground Beef

  • 2 tsp salt

  • 2 tsp pepper

  • 2 tsp cumin

  • 1 tsp chili powder

  • 1–2 tsp onion powder

  • 1–2 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp cayenne (optional)

  • 1 tsp oregano

  • 1 tsp dried basil

Avocado Boats

  • 3–4 ripe avocados

  • Lemon juice (to prevent browning)

  • 6 oz mozzarella cheese, shredded

  • Queso cheese, to taste

  • Lettuce and diced tomato, for serving


Instructions

  1. Preheat oven to 400ºF.

  2. Thaw your TriTails ground beef fully and cook it in a skillet over medium-high heat. Break it into small crumbles.

  3. Once beef is about ⅔ browned, add all your seasonings and continue cooking until fully browned and flavorful. Turn heat to low.

  4. While the beef finishes, prep the avocados:

    • Cut each in half and remove the pit.

    • Scoop out a bit of the center to make room for filling.

    • Brush the outsides with lemon juice to keep them from browning.

    • Place in a greased, oven-safe dish.

  5. Assemble your boats:

    • Add a bit of mozzarella into the center of each avocado.

    • Spoon in the seasoned beef.

    • Top with warm queso and a little salt and pepper.

  6. Bake uncovered for 8–10 minutes, just until the cheese melts and the edges start to sizzle.

  7. Serve with shredded lettuce and chopped tomatoes—or devour them straight from the pan.
